Aside from possible upset tummy from lactose intolerance and sugar, not much. Just don't give them hella ice cream all the time and nothing they couldn't otherwise have (cherries, chocolate, etc).

Gotta be careful about some sweeteners too. Xylitol is pretty toxic to dogs if I recall correctly.

I don't typically see ice cream using anything but sugar; but I suppose that could depend on region. There's also sorbitol which I read was common in peanut butter, but I've only seen one brand that uses it (Peter Pan).
