I have templates for various regular meetings that I attend. In these templates I have a property called "attendees". In each template I pre-populate that with names of folks who are regular attendees. Then I can edit it to catch the attendees on that specific day. This helps me when I search for a person's name it pops up with the meetings they attended.
In general I don't use properties as much as I could. Mostly to set tags, alias, and sometimes icon, but there are some exceptions where I have custom tags. For blocks I never think to use tags. Not sure what the use case is, but I'm sure there are some good ones.
