Normally, you'd expect the table to be sorted on the field.

You're thinking of DataTables. The lemmy-ui source code shows the css class as

Correct. This is part of the Lemmy Web-UI and not something that SDF can address unless they fork the project. The page will likely be improved with time, as is usually the case with open-source projects.
For now, you can sort communities by their statistics using the browser at: https://lemmyverse.net/communities
