I deal with the opposite - I'm not hungry but have food that needs to be cooked before it's too late. My solution is usually to throw it in a slow cooker and worry about it in 8 hours.
Ricecooker plus canned soups make it easier.. or frozen vegetables. But yeah I can still relate
