Foliage has dropped and the tree is pushing new buds now. Very healthy in my climate.

Crazy, how do you keep them over winter? All my woody plants always die as I dont know how to water them

It depends on the species and your climate. Most deciduous trees are fine being watered once a week if kept outside over winter. If you're climate is extremely cold you may need to bring them into a greenhouse or other protected space to prevent the roots from getting damaged.
