well, technically the x-33 would be single-stage (I don't know if it would count as a rocket though)

you could also consider the Apollo lunar ascent vehicle as a single stage to orbit vehicle i guess

It counts as a rocket, but it fails to disprove the "moon landing was staged" claim because it was only suborbital. The differences in ΔV between suborbital, LEO, and lunar transfer orbit are vast.
