I do not understand why people are crazy for eggs. I haven't purchased eggs since the pandemic and I'm not even vegan.
Back when I did buy eggs it was because I had a single recipe that needed them, and then I would struggle to finish the carton before they went off. Now I just don't bother and replace eggs in baking with a lentil replacement mix. It's so nice to have several dozens of eggs worth of mix in a small bag that's shelf stable.
