Somebody else asked: Cut firm tofu into cubes, pat dry, toss in a bit of cornstarch and fry in a pan with oil til crispy, set aside.

In the same pan, mix up a sauce with 2 spoons soy sauce, minced garlic & ginger, 1 spoon of rice vinegar, a bit of brown sugar, and some sriracha (or some hot chili sauce). Let it bubble a bit, then toss the tofu back in, stir it until sticky, viscous.

Plate with some sesame seeds.

The shrimp (prawn?) I fried in a bit of oil, for a few minutes on each side, towards the end I added some butter and a couple spoons of garlic & ginger paste. Plate with some chives.

Thai chili as garnish is 10/10, I soak my chopped chili in fish sauce for a bit of saltiness.
