With the latest updates to the popular Palworld, Valve have now bumped it up to Steam Deck Verified and SteamOS Compatible.
The rating has been a bit up and down with it going Unsupported in January, and then back to Playable a day later.

Funny, I've never played Palworld on any platform other than Proton.

Although you are correct (I think), with verified status you can actually open a ticket in case something does not work with proton. Usually the verified status is good for this use case. I do not know if games that are not verified can actually get support inside steam for proton (I doubt it).

if it doesnt you should be able to map the button to aim the ball to also enable gyro
