Sambal is chili paste. A lot of the time, depending on the cuisine, it has other things in it. Sometimes just garlic. Sometimes it’s shrimp paste. I’ve yet to have one that wasn't delicious! I’ve never seen this dish before. Looks…interesting. :)

You're gonna have a bad time if you demand plates for all kinds of food across the world. Here, the banana leaves are the plates, nothing wrong with that. Learn to appreciate things that are different than what you're used to.
