Not anything I have any expertise in, but searching by description it looks like a beefsteak fungus.

Yeah no for sure, if I were to try an eat it I would look at it in much greater detail. But it was so cute and I never saw one before, I didn't even think about it.

Agreed! Fistulina hepatica (beefstak fungus) looks pretty unique, I would be very surprised if this turned out to be anything else.
