I’m tired of the default keyboard. Swiftkey and Gboard do not work well for me. I was wondering if there was an open source keyboard (without jail breaking) that I could use.

No.
I should have researched how restrictive iOS is.aside from the apple pencil and procreate, it's not worth it in terms of software tbh.

Does the AppStore have any Open Source anything that is any good?

Not OSS but Typewise is privacy-focused. It has a normal mode and an interesting hexagon mode that some people might like after a bit of training.
There's a "Typewise Offline" version that works entirely without connecting to any server ever.
Premium is quite expensive though.

I’ve tried type wise and I do like the hexagonal layout, it’s just takes too much time (for me) to memorize where everything is, especially with my job being as demanding as it is.
How’s the regular layout on iOS?
