When clothes are made from bamboo it is the chemically extracted cellulose (a polysaccharide) that is made into rayon and knitted or woven into fabrics.

What I learnt in school is that polysaccharides are complex sugar (as opposed to simple sugars like glucose).
So they are, by definition, sugar too.
