I've played it for a week now with 40h in and I have to say it's a blast! I haven't been this glued to a game for a long while. It's a recommend from me anyway
I wonder if the new colonization system will be able to model something like the Dutch, Danish and Portuguese colonial empires. While all nations had (and have) a strong naval tradition, perhaps the economic demands of colonization in EU5 might make colonization on the scale that it actually happened unfeasible.
From what I've seen from the previews, colonization seems to happen at a slower pace than eu4 and tall gameplay is more viable. (I haven't watched all of the video, but there's a demo let's play from Chewbert showcasing Dutch play)
apparently there's a bit of a bug where the papal states do a lot of New World colonization
Wehale. The various island powers around the Pacific and Indian oceans were my favorite tags to play in eu4, and Wehale is one that exists in a spot that was represented just as uncolonized land previously.
Wow, that sounds cool :) I haven't followed the devdiaries closely at all, so I don't know what's possible now. I hope my home island of Samsø will be playable in some form. Maybe I should look up how colonization works now.

I’ve been burnt by one too many Paradox release. I’ll wait to see how EU V will be received.

Indeed. My first EUV game will be the waiting game. Two, maybe three years to see how they finish and flesh out this particular early access title.

Maybe Portugal? I figure I just ally Castile and easy mode it until I figure out what I'm doing.
Edit: I'm going Holland as it's a recommended start country. I think I'll just chill and dev and play tall.

None. I wont buy it. Paradox lost me as a customer with their stuff.

I am of course going to play Denmark with the goal of eradicating Sweden from the map.
