They get away with it sometimes here, but they usually cannot touch thieves. Every security guard I've ever talked to told me the same thing "they don't pay me enough to run after anyone!"
Yeah, like I said they do get away with it sometimes, but are usually fired if they do. If not criminally prosecuted. Most every company has big fear of being sued if a security guard seriously hurts someone and that fear is most often times baked very loudly into everything the guard sees or hears during onboarding.
Edit to add; no one is uploading videos of security guards doing nothing. Or at least those videos didn't get any traction.
This is the trick. Have a series of friends grab turkeys and stuff under their shirt in painfully obvious ways. Then walk to the doors, but don't cross so no actual crime has been comitted. Tell security you don't want the turkey and give it to them. Now security is burdened with multiple turkeys and your fastest runner only has one and is going out the door.
The ones in our Walmart a will be chasing you in the mobility scooters so you only have to last a little longer then the battery. One lap of the parking lot should do it.

I don't know about the US but in Canada, security can't even actually physically stop you in any way so no need to run!
