I made some wooden butter knives about a year ago, have been meaning to make more. Mine aren't quite as fancy as your but something about the feel of the wood in your hand is so nice
i'm not them, but i'd use a few layers of mineral oil, tung oil if i could get my hands on it. finish with beeswax. i'd worry about butter spoiling in the wood too much to use it as the primary finishing fat
