It is illegal to take any eggs from a wild bird's nest. Even an invasive bird. But these are from our domestic geese. It's the same as taking eggs from our chickens.

Soft boiled for dipping. Scrambled. Baking.
They can be fried but it's a little bit of a waste to do that. The whites are a little runny compared to chicken eggs so they aren't ideal for frying.
