What's wrong with the last one? It already has an HD remake from around the Gamecube era. It's available on PC and pretty much every modern console and still looks good. Looks even better with some fan made mods to further remaster the prerendered and 2D elements.
I think the problem is that it's a fixed-camera game. Outside of indie games, the fixed-camera is dead, and many people won't play a game with it. This means that Capcom is leaving money on the table by not remaking it with an over-the-shoulder perspective.
Personally, I don't mind because there are lots of great fixed-camera indie games. I get to enjoy both.

Nothing wrong with it, but I bet a lot of people would buy a modern remake of it with the tech and style of the newer games

I could have sworn that a RE 1 remake (a new one in the style of the RE 2 remake) was already announced, like a year ago or more?
