Should/must a calculus course cover the derivative of sine and cosine/other trig functions?

Many of my clients are in a class that doesn’t teach them, and it’s sad because they are my favorite for chain rule and u-sub.

Calculus without the falling ladder problem? That's unusual. Yes, it's necessary. Engineers need trig, physicists need trig, mathematicians need trig.

It’s a “business calculus” class, targeting life science and business majors primarily. The entire thing is structured oddly - they do L’Hôpital almost immediately after power rule/product/quotient rule, which seems like a recipe for disaster.

Yes, yes, yes, a thousand times yes! Imagine doing Fourier analysis without trig! (Complex exponentials are still trig, before anyone gets any ideas 😁)
