You see, Iberia was once controlled by a Muslim dynasty. Then the east portuguese faked being nice to them in order to get them to drop their guard. This was so effective, they did it multiple times. Darling/dear in east portuguese is "Quista", so that's why it's called the re-con-quista.

As for why they called their dialect Mexican? Because they were big fans of the moon, of course.
