Every now and then an update borks the connection between my phone and computer via USB. Normally when I plug in my phone it appears as a disk in the file explorer. Which package is responsible for this? Gvfsd? Is it something about MTP? I would like to roll back to the previous version of whatever is borking the connection but I have no idea how this connection works.

Which logs corespond to that? Like kernel log or is there something more relevant?

Rolling back isn't supported most of the time. Would help to know which distribution you are using. Id suggest to pick one with fixed releases instead of a rolling release one.
This can also be happening because of a kernel bug or a faulty cable. Why are you sure an updated broke it?

Also could just be the settings on the phone getting changed by accident.

It's Ubuntu. I'm "sure" of it because it didn't work after an update, and this has happened a couple times before that after an update my phone isn't recognized and then after the next update the phone is recognized again. I'm not sure what else it could be but I'm not in any sense an advanced user.

It could just also be because MTP is a POS and super fiddly.
