I think they're bringing visibility to the problem and have likely inspired many people to contact their government representatives.

Harassing Flock employees helps no one and will make it easier for them to label any criticism as domestic terrorism.

The only terrorist in this video was the flock employee (James Boyce) who called the police and implied that the youtubers might have guns.
Per Wikipedia, "Terrorism, in its broadest sense, is the use of violence against non-combatants to achieve political or ideological aims."
