Currently refining my ability to bake bread, although I'm still using instant yeast. I've got a lot more interests (and gardening is currently on pause) but my living situation limits what I can do.
Mostly gardening and homemaking. I dunno how practical making hot sauces and pickles is in the face of collapse, but it's relaxing and soothing and hypothetically could be a useful skill someday.
Different degrees of collapse. If we are returning to the palaeolithic era then your sauces may not help much but so many are going to die that it probably won't be much of a concern for you.
But most likely are a lot of tech we have will still exist. Even if it becomes less common or more expensive. High quality luxury goods, like hot sauces, would bring joy and remain something you can make.
First step was to admit that I in fact do live amid collapse. It took a few years of worry, fear and doom. Now I am living this kind of double life: to uphold whatever is needed/still working from the 'old' life while gradually building the new.
The thing is I know I have to die one day - the only difference now is that I'm aware that the risk that this event happens earlier keeps rising for me and fellow humans. This in itself is not really a problem, I'm not that attached to my body. Human population will shrink in the next decades.
Instead of panicking and getting very active I have slowed down. Life continues as it can, and my job is working towards biodiversity, which I do in my local area. There's hectares of burned land to restore. I grow food, I care for my animals. After I'm gone the trees I planted will keep growing.
Working hard on my water catchment, solar power, and anchoring things down from storm winds.
Eventually going to start a big garden, but that takes a lot of time and water which I do not have yet.
I just hathe juiciest watermelon I've ever had. It was seriously great and I still have more for tomorrow. I don't believe in God but that guy has truly have to be a special crack case.... I mean pistachios... Tiny and you gotta cook them and crack the shell open. Only one pistachio per shell. People might get addicted! On to watermelon.. Bigger! Add more water! Bigger!.... But lord, they don't have refrigeration right now! Oh they will in a few melania. They will go to a place of warship called Costco as part of the priceclub religion. But if they eat it all now their stomachs will pop and they will die lord!... Nonsense! I said bigger! And more juice! And make the white stuff taste weird. Bigger! But lord! It will be too heavy to lift and carry! Bigger! And add a little grease to the surface, I want them to sweat a little. How about melon Lord? Nah, make that one orange, juicy, small enough for a one hand grab and give it a grippy surface. The papaya... Make that American style. What do you mean Lord? Just make it overly elongated like a football. I don't understand Lord, wouldn't that be more like a foot? A ball is spherical. Do it!... Also make the surface grease.

Look into sourdough starters, it will eliminate your need for instant yeast. All you need to make a sourdough starter is flour and water.
