It feels similar in vibe to dutch baby pancake. Both use a preheated pan or dish, some fat, and a dough that is quickly poured in and baked in the oven. It tastes better this time than last I made it, but the consistency is the true star of this dish. It's both crunchy and chewy, and the bits of meat add some variation. Though I would love to add some spices or sauce, or vegetables on the side or something

Disclaimer: not from UK, never have been there.
I've made toad in the hole a few times, because how could I learn of a dish with a name like that and not make it?!
When I was looking for recipes, everything recommended onion gravy, which sounds like it'd be appropriate, and it's paired well when I've made it. I can't find the exact recipe I used, but here is a recipe that sounds approximately like it. Basically onions, beef stock, mustard, and Wooster sauce.

That sounds like a good combination! I'll add the onion gravy, so it gets more varied flavour
