Getting a better tablet with a de-Googled version of Android would have been a far better use of resources.

Eh, that depends on your goals. As they pointed out repeatedly, it was more about the journey than the result.

Don't have an Android tablet myself, but LineageOS maintains a compatibility list in terms of devices it supports here.

It does make you wonder though, what's the worse environmental impact? The tablet in the landfill, or the co2 that liberated it? The processes could always be reused, keep in mind.
