I recently bought a Xiaomi Pad 6 (8-core CPU, 8 GB RAM, 256 GB storage) to use as an ultra-lightweight “laptop” – at just 490 g. Here are my observations on what works, what doesn’t, and a few tips for anyone looking to replicate this experiment.
This was a very successful experiment and I’m happy with the results (...) GNOME on-screen keyboard sucks (...) I would also try to get a Xiaomi Pad 6S Pro 12.4″ with 12GB of RAM because of the larger screen and to get a bit more room to emulate old stuff.

you should try plasma mobile. despite gnome being amazing on touchscreen devices, as you mentioned, the osk sucks. you can improve the interface with an extension called "touchup" iirc, but the keyboard will remain unchanged. plasma mobile comes with gestures and a usable osk right out of the box. there is a plasma mobile spin for fedora and i believe postmarket os also has it as a package.

I tired that extension and I don't think it solved any real problem I had. I'll try Pasma mobile soon, but it does look more like a Phone OS than a tablet.
I don't particularly like GNOME, never did, but in this case the only thing that really bothers me is the keyboard. I don't get it, how hard could it be to use what they make and see that it doesn't work out? Or just copy what Apple does?

Yes plasma mobile seems more phone focused, but the actual apps scale up just fine for a tablet. If I had to compare the interface Id say its arround android 5 or 6 in terms of features and usability. No splitscreen or picture in picture but you get windows if you switch into docked mode via the control center. The best thing for me is the performance. I use it on an old surface go (the first one) and its honestly very usable, gnome in comparison is just a tiny bit too heavy to have a fluid experience. the second best feature is the waydroid integration.

I've a problem with the standard Plasma, whenever I hit the tablet power button instead of sleeping right away it shows the power screen. Doesn't make much sense.

Im pretty sure hitting the power button locks and turns off the screen on mine(and eventually the tablet goes to sleep). I actually dropped my tablet yesterday :( so I cant say for sure until i replace the screen, but I believe you can change that behaviour in the power settings?
