That's fun :D I've put plenty of plants in cups to grow out roots but I've never thought of putting them into an aquarium haha
I've been wanting to put some kind of water bowl/trough on my balcony with a pump to make some soothing noise. If I get around to it I'll stike a potato in for sure!

Yeah they grow in there! However afaik you shouldn't expect to get much of a "harvest" that way.
