Cadence / RPM Question

Genuine question in regard to Cadence / RPM.

I'm currently doing the Switzerland Mountain Bike Series with Regan Pearce.

The last ride in the series I completed was the Lauterbrunnen Ride. Before entering the ride, the details of the ride approximate to about 13.3 kilometers in length and calorie burn of around 321 calories for the 34-minute ride. It was a train to terrain ride.

During the ride, I let the incline / resistance be controlled by the trainer.

My stats at the end of the ride amounted to 21.4 kilometers completed, calorie burn of 623. Not trying to boast at all.

This is where my genuine question in regard to Cadence / RPM comes in.

As mentioned, I let the resistance and incline be controlled, throughout the ride, the lowest resistance setting was 18, though climbed up to the max of 24. Incline drifted between zero and three to four, slightly peaking at some stages during the intervals.

During intervals, the stats at the top, were indicating to sit at a Cadence / RPM of 60, at a resistance between 20 and max 24. During this stage of the ride, I was able to maintain my Cadence / RPM at around the 80 mark, which was what I was able to average throughout the whole ride.

During these stages of the ride, should I in fact drop my Cadence / RPM levels to 60 (as the stats at the top indicate), even though I can maintain at 80? Am I not getting the full benefit of the workout, by just powering through the ride at the higher cadence, even with the steeper inclines?

It's not that I find the rides easy either, by the end of the ride, I'm exhausted and dripping with sweat.
