Geordi can see through the cards, and Data is a supercomputer. I guess its just a testament to how Godly of a Poker player Riker is that he could consistently clear that table. Poor Worf never stood a chance.
She mentions it in a later season and basically says "don't worry, I don't read you during our games" which was probably BS, because most Troi episodes revolve around her not being able to "turn off" her powers.
I like to imagine after his holodeck time as James Bond was interrupted by an accident that put the rest of the ranking officers in danger, he solved every one of his spy novels by just joining the villain.

I think she has to concentrate to know who's emotions she is receiving. Otherwise she can only tell that someone is bluffing.
