I bought eggs for the first time in years so.. eggs I guess! Maybe I'll cube and fry up some Spam and scramble some eggs with it.

Edit: hmm I know spam is meant to be pretty resilient but most sites I'm seeing are saying try to use it within 3 years..

Yeah, but pre-cog steps, so less steps on a Tuesday... Or something something sci-fi!

There's a huge downside to cooking a big batch, night 2 is okay, but we've got enough for night 3 and I'm going to have to be extra creative and make a taco pie tomorrow to keep the family happy.

Just a bit of cheese and onion in the egg mix, then a bit more cheese melted in the middle. Plain, simple and yummy.

Little cool here today, so cooking up a hearty Corned beef meal! Roughly based on this WW recipe, but I chuck in a cup or 2 of ginger ale instead of sugar, skip the vinegar, and add mustard powder, a little cinnamon and nutmeg,.and let it rest for 20mins in the pot before serving.

Looking forward to making a Reuben sandwich with the leftovers tomorrow too! Sometimes I think I only cook this to have a Reuben lol
