Does Element log the IP address of app users?

Not sure anyone here can answer this but it is best to assume so.

from my knowledge, element doesn't but the home server does, depending on their setup

Sadly the matrix protocol is leaky because of WebRTC. IPs are logged everywhere. Solution? XMPP, native proxy support, darknets ready and awesome no bloat clients!
