Whenever someone says this, just take a breath, say something like "sorry, I'm really excited about this topic", and then leave them a chamce to respond. Silence is ok, you don't need to fill the void.

See, I'm the kinda guy that'll just say, "slow down, hoss, take a breath. It's all good. We got time."
