I don't know if it's best practice but I mount everything to a specific folder instead of volumes. I also just stop all the containers before a backup instead of database dumping. Then just do an encrypted B2 backup using Restic.
So far I had to restore twice in six years of running this system and assuming the folder path is the same the only thing after downloading all the data I had to do was
I want to use Immich because it works and looks great, but the lack of even basic editing features (like image rotation or EXIF editor) is deal breaker for me.
Personally I like using brainarr.

Yes, exactly. I love oldschool pixel graphics but those are just very poorly animated and look terrible.
Obsidian is also free if you can manage syncing on your own.

You should try installing the Memories app in Nextcloud. The built-in gallery is very limited and can't read EXIF data.
