Having a moccamaster or other SCA approved drip maker for crowds does seem reasonable. Whether you use the espresso machine "enough" to keep it around is of course up to you.
I basically just use it for text notes with no customization and it works totally fine for that.

I thought that the flavor profile was pretty unusual compared to more typical processes. I would try them once if you often try different beans.
Yes, they are normal coffee beans. Honey process means leaving some of the coffee fruit on the beans when drying.

I just did this earlier today. The installation went smoothly, the main quirk is that postmarket ships with almost no software.
