Generally I've not yet had any issue with any server but I don't use the providers list and didn't try the servers you mentioned.
I would not recommend the providers list. It's listing doesn't really prioritise what's actually important to a user

I've got ublock since ages but deploying custom filters like that is way over my head.
For me that's stability and features, secondary to the technical background. So electron based or based on the snikket-sdk / borogove or something totally native.. Idk.
Some people are missing a desktop client for Windows that can do Calls. I would think something bloated like electron based that can do that is preferable to nothing (or to the abandoned dino fork).

Very good question and one of the big critic points about signal.
It is theoretically foss, but so complicated apparently, (or parts missing?) that it seems nobody ever menaged to set it up.
So in effect it it proprietary.
And since I is lock-in there is also no incentive to start another server. That's one reason to use federated protocols.

Hm. Vermutlich ne gute Idee wenn so computer Vereine ( CCC, freifunk, disroot etc) sowas hosten könnten für Mitglieder (falls sonst zu teuer) oder für alle falls machbar...

Matrix on ejabbered doesn't really work as one would like, at least that's what I read, so best test it on another subdomain before you really migrate.
I didn't read yet from anyone, really using it as a matrix server.
