I'd suggest adding the fruit as a topping. The added wetness keeps the pancake from cooking all the way through, and the heavy fruit pulls the sides down.
But if you like the strawberries baked, try blotting the cut pieces before adding to the batter to remove as much moisture as possible.

It was pretty wet. I think next time I make it, I will use 3 tbsp of butter instead of 5. However, it tasted great.
