Limestone is super basic so I would pair with something acidic, I think white wines in general are more acidic so imma agree with op.

Frankly, I think the diacetyl from an aged chardonnay would give it good company if time isn't an issue.

Honestly, I’m a little surprised. I would have expected basalt to pair with a red, and granite to pair with a white.
