My guess concerning the streaming from Linux is that they haven't got Wayland capture to work perfectly yet. I remember seeing several issues about that. You also currently cannot stream the game mode screen.
You could try X11.

The only problem is size and bandwidth. Videos are much larger than images so they take up more space on the server. But if that video is hosted elsewhere like YouTube it won't take up any space at all.
Only problem with YouTube on Lemmy is that the videos are often posted without a short description. If you provide that you should be fine.
Any Lemmy server that cares about space or bandwidth has image and video proxying disabled. That means that all images and videos stay where they were originally uploaded.
I literally told you the potential issues. Search the internet, read and understand stuff, learn. This isn't something for a short comment on a low effort post.
I have Long Covid. I'm in my fourth or fifth year. Basically can't leave the bed. I feel considerably dumber. But everything is hard for me now, so 🤷.
I think there is a massive range of possible issues (both in severity and duration) following an infection, so it has to be evaluated on a case by case basis.

Did you try any non-Steam Android games? Personally I am especially interested in the Team Beef ports and whatever is available on SideQuest.
Someone on YouTube tested the PC version and supposedly it ran perfectly. That should also work with all the mods I guess.

You can root your Quest 1 or later and remove all the Meta stuff. Or you can disable wifi.
You will probably have to use pirated apps to keep them working.
