What gimmick loadouts do you like to use? I personally really like trolldier for those satisfying shovel crits, but I also enjoy fat scout and combat medic.

Shotgun is so underrated in this game. I enjoy playing as Soldier with a shotgun or fat scout — people are so used to soldier rocketjumping around and only using his RL, and heavy being a slow unit that can't fight his way around corners, that they (almost) never expect me pulling out that shotgun and finishing them off

I like huntsman but I cannot say its a gimmick since I kinda dominate public servers with it. I would like to play with full set of The Special Delivery on scout because I love The Milkman from Psychonauts 1 but I still need to create the Milkman Hat xD

Carbine Sniper.
I take a bow, but more importantly I take the Cleaners Carbine and Bushwacka. The idea is to play near the front and build up Crikey, then activate it to get guaranteed crits on the Bushwacka. The bow is basically for cheesing sentries.
