On smaller pizzas I do, but this was a large, and needed the extra time for the middle to cook.

Love the crisp edge pepperoni. Interesting choice with the pineapple, I usually see it used with ham/bacon. What brand of pepperoni and cheese are you using.

Boar's Head pepperoni, Lucerne mozzarella, and safeway pineapple. I buy the better stuff when cooking for guests.

I agree with you but I still find quality stuff is sometimes hard to find especially with cured meats.
