I'm a dude but I really want one of those.

If I could crawl into a 20'x30' hole deep underground that had enough food and water, a toilet and some kind of entertainment, I'd never leave.

I found that holing up is really bad for my health, both physical and mental.

Why don't modern homes have these? I'd never leave my house

This isn't a cave, it's an alcove.

I still want one, but have already accepted I'd never be allowed to use it because of cats.

There is a part about these in Christophe Alexander's "A Pattern Language: Towns, Buildings, Construction ". Worth a read.

I could see building one of these.

Put two closets on a wall. Space between should be a standard twin bed size. Built in bedframe (with good air flow) and drawers beneath it like a platform or day bed.

Tasteful curtains to close it. Seems like a baby canopy bed.
