I don't think the recipe would work. All it says to do is to put any potato salad in a loaf pan in the fridge for a couple of hours. I don't know of any potato salad that would hold its shape when dumped out of a loaf pan.

You can use mayonnaise to substitute for eggs and oil in cakes. Like chocolate cakes, not just savory cakes.
