Wish there were more wings but the flank steak/briskit looks pretty good, seems like a lot of dry beans though

You need to replace the white sauce with Santa Maria Salsa (this recipe looks pretty accurate: https://www.seriouseats.com/santa-maria-style-salsa-recipe) served over the steak, and I trust those are Pinquito beans?
Now in the Northeast, but spent years in Santa Maria. I miss oak bbq'd tri-tip.

I like the tangy white sauce better on tri. we always got the salsa for others of they want it!
