Quarter potatoes and boil for around 18 minutes, or until the outside is just start to soften and break apart.
Strain, mix with a couple tablespoons of beef/bacon fat or vegetable oil.
Make sure you rough them up so that you get a creamy, particle-rich coating on the exteriors mixed in with the oil.
Bake at 375 (on parchment-lined pan) for about 45 minutes, turning once.
