I'm not op but, I'm told fresh potatoes keep for a long time and store bought potatoes are already stored for a while before they hit shelves.
Op mentioned in a comment that this was an Amish store so I imagine they get a fresh product.

It would not. Not here. The other Amish farm stand like 11 miles the other way does use weight for some things, but I don’t like them.
