It looks great! How are you planning to attach the tail? I’ve never made anything stuffed except maybe a pillow which is very much not the same thing. I’m curious about putting two already-stuffed pieces together.
Probably hand stitching, I did a whale plush simmilar to this a few years back and that's how I did it. (Stuffed the tail a bit into the body hole and hand sewed ) my tail was not as stuffed so it wasn't hard.

Hand-stitching them together with a ladder stitch is my usual method
