The kappa favor cucumbers and love to engage in sumo-wrestling. They are often accused of assaulting humans in water and removing a mythical organ called the shirikodama (lit. "buttocks-wee-ball") from their victim's anus.

Hahaha. A friend told me about Kappa at a party a while back. Have you seen how to properly trap a Kappa? You dangle your ass over the water to lure one in and then your buddies spear it.

I was mistaken. I had thought there was a kind of undead and a serpent too but apparently these are all just variations on the Kappa legend. The butt soul is called a shirikodama though.
