Tl;Dr cellulose and ethanol are both organic molecules made of carbon, oxygen, and hydrogen in similar quantities, or similar enough that you can get the oxygen needed from the atmosphere anyways.
For further consideration:
Margarine was developed by Nazi Germany so they could make butter from coal during the wartime shortages.
