One challenge of not using a phone is that if they take the camera away from you, the footage is lost. With a phone, there's the possibility of streaming the footage to online storage so that destroying the phone doesn't destroy the footage.
Having a burner that you only turn on when recording is probably a really good idea.

Every assumption is that you use a phone. Why not a simple dedicated video camera? It eliminates many of the concerns.
