It's hard to cook 10 burgers on a stovetop, especially without anywhere for the grease to go. You can cook 3 patties max before it's being boiled in grease on a pan.
It's hard for typical cookware to get to and maintain 500f like this griddle can. Only way to get perfect sealed sears on meats is high heats.

Maybe pick up some flavors from smoke! And it’s nice that any smoke is outside. Actually I’ve lately been doing more “baking” on the grill, most recently a pan of Mac and cheese.
